Ingredients for vegan Pad thai for two:
1/4 cup olive oil
2 cloves shredded garlic
1/2 tsp coriander
1/4 tsp crushed red pepper flakes
3 tbsp sugar
1 tsp onion powder
1/2 tsp vinegar (we used apple cider vinegar)
1/2 cup sliced baked tofu (we made this in previous episode-very easy)
1 1/4 cup veggie broth (also in previous episode)
1/2 lb rice noodles
1/4 cup shredded cabbage
1/4 cup shredded carrots
4-5 fresh basil leaves thinly sliced
1/2 tsp sea salt
1 tsp vegan worcestershire sauce (we used The Wizards brand)
1 tbsp fresh lime juice
crushed peanuts and sprouts for garnish ( just a handful to your liking)

Ingredients:
Dough for 2 shells
2 cups Fresh baby spinach
2 cups Fresh broccoli chopped
2 cloves minced garlic
Vegan cream cheese (Tofutti or Food Galaxy) spread spoonfuls over pizza shell
Vegan pizza sauce
Sprinkle garlic powder/parsley blend and oregano (to your liking) over pizza
Daiya cheese Mozzarella 1/2 bag & Cheddar 1/4 bag or (your favorite vegan cheese)
Add top shell make sure there is no oil or sauce on crust layer so it can stick together. Shave sides down with end of pizza cutter or wooden spoon handle.
Brush top with mixture of a little pizza sauce a a tbs or 2 of olive oil or water.
Cut slits on top layer.
put in over for 10-15 mins at 430*

This hearty kale salad packs well for lunch and is delicious for dinner. The cashew-based dressing is a garlic lover's dream. Add your favorite vegetables for a nutrient-dense meal.
Raw Kale Salad in Creamy Garlic Dressing
Serves 2-4
1/3 cup raw cashews
¼ cup water (plus additional water for soaking cashews)
1 Tbsp freshly squeezed lemon juice
1 Tbsp low-sodium tamari
1 heaping Tbsp fresh cilantro
2 cloves garlic, roughly chopped
1 bunch curly kale
Any favorite raw vegetables, chopped (for the kale salad)
Cover raw cashews in water and let them soak (or for several hours for creamier dressing) while you chop the kale and salad ingredients. Pull the kale leaves from the center rib, and roughly chop the leaves. Move the chopped leaves to a bowl and massage them for a couple of minutes until the kale takes on the appearance of steamed kale.
To make the dressing: blend cashews, ¼ cup water, lemon juice, tamari, cilantro, and garlic in blender until creamy. (If you're making the dressing ahead of time, store in a sealed container in the refrigerator for up to five days. The dressing will thicken over time.) Toss the kale with dressing until the leaves are evenly coated and then add whatever fruits and vegetables you like.
