Shiitake Lettuce Wraps Recipe :: Vegan
Recipe Difficulty ::EASY:: This is my quick'n dirty vegan twist on the ubiquitous Shiitake Lettuce Wrap or Cup.Simple enough to toss together for a delicious lunch or serve these as an appetizer at your next party.
You can rehydrate dried shiitakes of you are unable to get fresh shiitake mushrooms in your sliver of the universe. Use coconut aminos instead of soy sauce to keep the recipe soy and gluten-free or you can use (vegan) oyster sauce if you don't have dietary restrictions. I sweetened with dates because someone challenged me to make it sugar-free but feel free to use your favorite sweetener...whatever the equivalent of 2 tsp. of regular sugar. If using a granulated sweetener, mix it into the coconut aminos or soy sauce before adding it to the dish.
This recipe for kimchi edamame dumplings was inspired by meals I had at M.A.K.E. and True Food Kitchen,enjoyed during my latest adventure. Use coconut aminos instead of soy sauce for a gluten-free recipe. Turn up the tasty firestorm with copious amounts of gochujang or sriracha.

The Hollandaise sauce recipe on my blog is modified from the original recipe on The Vegg's website. Use this recipe if you do not want to mix the whole pack of Vegg with water at once. My recipe uses a little more than half of the package of the dry mix and yields about 2 cups of rich, creamy Hollandaise sauce.
Use the recipe on http://thevegg.com if you have mixed your whole pack of Vegg mix with one liter of water.

Jai- Buddha's Delight
Jai is also called monk's food and is served at the Chinese Lunar New Year celebrations. The dish is put together with 12 lucky ingredients. Allow yourself at least 2 hours to prep for this dish. Shop in Chinatown or an Asian market to find the specialty ingredients. If you are unable to find a certain item, you can easily substitute another vegetable like, carrots or sugar snap peas. Enjoy this dish with family and friends for a healthy, wealthy and prosperous New Year!
Soak for 2 hours in hot water:
1-package mung bean noodles
Soak for 30 minutes in hot water, drain:
1-cup wood ear mushrooms (black fungus)
Half a package of bean curd sticks (cut into 2 inch strips after soaking)
Soak for 10 minutes in cold water:
1 cup fried wheat gluten (dao pok)
8 jadofu (aburage) fried tofu pockets, cut in half
Slice 3 cups shitakes (remove stems), 1-cup water chestnuts, 1-cup arrowroot (see goo), and 2 cups lotus root
Blanch 3 cups snow peas for 30 seconds then shock in ice bath
Shred 1 bunch Napa cabbage, remove core
Skin 1-cup gingko nuts (cut in half to remove sprout to avoid bitterness). Try peanuts as a substitute if gingko is unavailable
Boil 3-inch square piece of black hair seaweed (fat choy) for 10 minutes with a one-inch piece of ginger and a pinch of salt. Drain, cool and squeeze out water
Mix 1 cup reserved mushroom soaking liquid, 2 cups water, ¼ cup tamari soy sauce, ¼ cup sugar, and 2 Tbsp black bean sauces
Heat 2 Tbsp red bean curd and 2 Tbsp fermented bean curd in wok on high heat. Mash with back of spatula until broken into small bits. Add liquid seasoning mixture. Bring to boil for 2 minutes. Add shitakes, wood ears, lotus root, water chestnuts, arrowroot, ginkgo nuts, black hair seaweed. Cook for 4 minutes, until slightly softened. Add bean curd sticks, fried wheat gluten, fried tofu pockets, noodles. Toss well. Correct seasoning. Add Napa cabbage, snow peas. Serve immediately. Makes about 8 servings.

After I shot, edited, and uploaded this video,I realized I had a brain fart and this is actually "Ube" and not Okinawan sweet potato. But the good news is you can use either one and the recipe is still delicious.
I'm trying to focus more on eating a rainbow of foods each day. My recipe was inspired by Colleen Patrick --Goudreau's book Color Me Vegan. This combination of Ube and coconut reminds me of a dessert we love here in Hawaii, Okinawan sweet potato and haupia pie.
Okinawan Sweet Potato and Coconut Rice Pudding
1/2 of a cooked purple sweet potato
1 cup uncooked rice or quinoa (washed)
2 cups coconut juice (or coconut water)
2 cups coconut milk blended with 10 pitted dates OR 1 teaspoon stevia
½ cup sun dried blueberries
¼ cup flaked unsweetened coconut
Wash and drain your rice. Heat 1 teaspoon of coconut oil in a medium size pot on high heat. Add rice and sauté until it becomes translucent, about 1 minute. Add coconut juice, cover with a lid, reduce to medium heat and cook for about 10-15 minutes. When most of the liquid has been absorbed, give it a stir and add half of the sweetened coconut milk mixture to the pot. Mix until you get a creamy consistency, add more of the coconut milk as needed. Add cooked sweet potato and stir.
Garnish with blueberries, flaked coconut and sweet potato hearts. Enjoy!

One of my favorite restaurants in San Francisco, Gracias Madre, may be closing * cries*. But you can still make this fantastic dish at home. Start on the salsa char first, and then bake your sweet potato while the oven is still hot. Finish making the salsa and cashew cream while your waiting for the sweet potato and you can finish everything in about an hour.
The sweetness of the sweet potato puree is a great contrast to the spice and heat from the salsa and chipotle. I like to add tamari pumpkin seeds for texture and crunch. Use organic high fiber tortillas and this beta-carotene packed snack will have about 10 grams of fiber!
Sweet Potato noQuesa-dilla
One half sweet potato or yam baked (bake 400 degrees for about an hour or until easily pierced)
¼- ½ banana or plantain
sea salt
tortillas
Puree baked sweet potato and ¼ banana. Start with a little and add more to sweeten to taste. Add sea salt. Spread on half of a warmed tortilla. Top with salsa verde and chipotle cashew cream. Garnish with tamari pumpkin seeds.
*If you are not going to use the puree immediately, do NOT use the banana. It will oxidize and turn the mixture brown.
Salsa Verde
5 Tomatillos (outer husk removed)
½ onion
1 jalapeno pepper
Place everything in foil-lined pan. Broil until well charred on both sides, about 8 minutes. Pour tomatillos, onion and pepper into food processor. Add 3 cloves roasted garlic, cilantro, lime juice, cumin and salt. Pulse in food processor
Chipotle Cashew Cream
1 cup raw cashews soaked for an hour, drained
2 tablespoons miso
2 chipotle chiles in adobo
lime juice
salt(to taste)
Put all ingredients in a VitaMix or food processor and blend until creamy and smooth. You can keep the unused portion in the fridge for about 3 days.

I am currently obsessed with two things: Pinterest and marshmallows. I spied WhipperBerry's Hot Chocolate on a Stick *DIES* and had to try to make it. Now I actually had a need for Sweet and Sara marshmallows, instead of just a gluttonous want.

I don't speak French but I think Ganache must mean "chocolate that we managed to cram MORE fat into". That's all it is. I used coconut milk and creamer because it has such a high fat content. And as an island girl, I love all things coconut. If you don't share the same love affair, you could experiment with other nut milks, macadamia might be very interesting.
* To make coconut condensed milk -- Heat two 14 oz cans of coconut milk plus ½ cup sugar over medium high heat. The mixture will thicken and reduce by 50%. Use any extra for Thai coffee/tea, yum!
