Preheat oven to 350 degrees. Cream earth balance and sugar. Add soy milk, vanilla and 3 mashed bananas. Combine dry ingreadients in a separate bowl. Gradually add to wet mixture until incorporated. Fold in shredded carrots, coconut, raisins, and almonds. Spread evenly in a greased loaf pan. Bake 65 minutes or until a fork comes out clean.

Create a campfire or heat up your grill. Or preheat your oven to 400 degrees.
Make a four large foil packets. Chop potatoes, mushrooms, green pepper into 1" chunks. Cut 1/2" slices of carrots and sausages. Remove ends of beans. Peel and chop garlic into large pieces. Drain tomatoes. Mix all ingredients together in a large bowl. Add salt and pepper. Divide evenly among the foil packets and seal them tightly. Cook on a grate over a campfire or on a grill for about 30 minutes (until potatoes are soft enough to eat). If you're staying inside, they'll take about 50 minutes in the oven.
You can use store bought vegan sausages or make your own. We used this recipe from Everyday Dish TV
The video was filmed in January 2010 on a frigid 10°F evening in Humboldt Park, Chicago. Our friends Jessi and Patrick were screening their video installment, proximity: the closeness of apartness, on a giant screen through the front windows of their apartment. We decided to turn the screening into a camping outing/bbq. Watch as our cheeks get red and our fingers go numb.
Slice sausages into long, thin strips and heat them in the oven or on the stovetop. Sauté onions in olive oil until soft and starting to brown. Slice bread and assemble your sandwich. Layer the soycheese in between the heated sausages and onions to help it melt. Put the whole thing in the oven for a minute or two to speed up the melting and toast the bread a bit. Slice it up and enjoy.
RECIPE - Parsley Potatoes
4 medium sized potatoes
1 clove of garlic, minced
1 handful of fresh parsley (or one tsp. dried)
2 Tbs. olive oil
salt and pepper
Peel and chop potatoes into 1 inch cubes. Finely chop fresh parsley. Combine ingredients in a bowl. Season with S&P to taste. Bake in a 375 degree oven for 30 minutes or until potatoes are soft, turning potatoes every 10-15 minutes while cooking.
The guys at Chicago Soydairy http://www.chicagosoydairy.com/index.php were so nice to surprise us with a sample of their new, improved and stretchy Mozzarella Vegan Teese (not yet in stores).
I am sure purists may frown upon our interpretation of the Philadelphia classic, but we know something is good when a week later our apartment still smells like onions :) We had a blast in the City of Brotherly Love last fall. Peel eggplant in stripes longways, leaving some of the skin on. Remove ends and cut in 1" slices. Place slices in a strainer, cover with about a tablespoon of sea salt and let drain for about a half hour to remove bitterness.
Preheat oven to 400 degrees.
In a shallow bowl, combine breadcrumbs, 1/2 tsp salt and spices. Place eggplant slice in breadcrumb mixture, cover evenly and tap off any extra breading. Place on a well oiled cookie sheet. Repeat until all are covered with breading. Drizzle with olive oil and bake for 15 minutes. Remove pan from oven, flip patties, drizzle with a little more oil and bake for another 15 minutes. If slices still aren't crisp to your liking, flip the patties again and bake for another 5 minutes.

RECIPE - Vegan Mac & 'Cheese'

1 lb macaroni
1 cup nutritional yeast
1 cup unsweetened soy milk
2/3 cup water
1/2 cup canola oil
1/4 block firm tofu
1/3 cup tamari
1 1/2 tsp paprika
1 tsp garlic powder
1 generous squirt of mustard
Preheat oven to 350F. Cook macaroni as directed on box. Drain and rinse with cool water (to halt cooking). In a food processor blend all the other ingredients until smooth. In a large bowl combine the blended 'cheese' sauce mixture with the cooked macaroni. Mix well so the sauce gets on all the noodles. Bake in a large casserole dish uncovered for 15 minutes.
This recipe is so easy, cheap and delicious. We make it once a week since filming the webisode.
SPICE IT UP! Add a Chipotle pepper or two when blending up the sauce ingredients. Gives the dish a nice smokey kick! Look for the little 7oz. cans that say "Chipotle Peppers in Adobo Sauce."

(RECIPE - The Vegetarian Librarian)
7/8 cup vegan shortening
3/4 cup sugar
1 tbs. vanilla
Egg Replacer, the equivalent of 2 eggs
2 cups flour
2/3 cup cornmeal
1/4 tsp. salt
Glaze:
1 1/2 cups of powdered sugar
the juice and zest of 2 clementine oranges
Combine dry ingredients in medium size bowl, set aside. Cream shortening, vanilla and sugar with an electric hand mixer in large bowl. In separate bowl use electric hand mixer to whip 3 tsp. of egg replacer with 4 tbs. of water until frothy. Add egg replacer mixture to shortening mixture. When combined, gradually add dry ingredients. Drop on ungreased cookie sheet in rounded teaspoons.
Bake at 350 degrees for 12-14 minutes, until the bottoms begin to brown. Cool on wire rack.
Combine ingredients for the glaze, adding extra powdered sugar if too thin. Dip cookie tops in glaze and let set on wire rack. Add sprinkles if you like.

Ingredients:
3 cups of AP flour
2 teaspoons sea salt
1 1/2 teaspoon instant yeast
1 tablespoon sugar
2 tablespoon corn oil
1 cup of unsweetened soymilk
Mix dry ingredients. Add oil and soymilk. Mix by hand or in food processor until dough forms. If dough is very dry, add more soymilk one tablespoon at a time. Dough should not be dry and crumbly nor wet. Form into a ball.
Lightly oil a bowl, place dough in bowl and cover with damp cloth or plastic wrap. Let dough rise for 2 hours or until the dough has doubled in size.
Uncover the dough, deflate risen dough by punching down. Knead dough a few times and reshape into a ball. Recover and let the dough rest 15 minutes on a flat surface like a cookie sheet.
Take a handful of dough, flatten into a disk about 4" in diameter and place on a flat surface. Cover and let rise for about 30 minutes or until they puff up slightly.
Heat an ungreased, flat griddle or skillet over medium heat for 10 minutes. Sprinkle lightly with cornmeal and lay the muffins on the pan. Cook on each sides for 10 minutes. Muffins should be slightly browned when they are done.
Split with fork, enjoy hot off the pan, toasted, or topped with anything that comes in a jar!

6 small red potatoes

Serves 6-8 (In the video I made a huge batch - 3 gallons!)
1 lb. leeks
3 carrots
3 stalks of celery
6 small red potatoes
1 cup baby lima beans
1 bunch of watercress (spinach works too, if watercress isnt available)
8 cups of veggie stock
olive oil
salt & pepper
Trim and chop leeks into small pieces. Over a medium heat, saute leeks in a tablespoon or two of olive oil in the bottom of a decent sized soup pot. Stir frequently. After five minutes add chopped carrots and celery. Cook another five minutes or so until the carrots and celery start to soften up, then add the veggie stock. Chop potatoes with the skins on and add to the pot. Toss your baby lima beans (fresh or frozen) into the mix. Keep flame at a medium heat and cook for 20-30 minutes or until potatoes and beans are tender. Remove big stems from watercress, chop remaining leaves and stems loosely. Add watercress to the soup and turn off the flame. Cover pot and let sit five minutes before serving. Salt and pepper to taste.
