1 bag (2 cups) vegan marshmallows
3 tbsp Earth Balance Buttery Spread
2 cups graham crackers (crumbled) We used these http://bit.ly/KjW4Ei
3 cups crisp rice cereal
2 tbsp agave nectar
2-3 tbsp vegan chocolate
Large pot on medium heat
melt butter
add agave
add marshmallows except small handful
stir till melted
add rice crisp and stir take off heat
add to dish and spread evenly
add leftover marshmallows and some
crumbled graham crackers to top
melt chocolate and drizzle on treats

Corn Dogs
1 cup flour
2/3 cup corn meal
1/4 cup sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 brick silken tofu
1 1/4 cup almond milk or soy
1 tsp salt
1 tbsp agave
vegan hot dogs or sausages
In a mixing bowl combine all your dry ingredients and whisk together.
Add your tofu and mash it up.
Add the wet ingredients and the Agave and mix together.
Set in fridge for 10-15 mins
Heat a pot of oil to 350 degrees
Put your dogs on a skewer and coat with some corn starch.

1/3 cup Earth Balance Buttery Spread
3/4 cup sugar (Wholesome Organic Sugar)
1/2 cup almond milk
1/2 tsp vanilla extract

Ingredients:
For potato topping
2 cups chopped potatoes
1 cup chopped sweet potatoes
1 tbs Earth Balance buttery spread
1/4 tsp pepper in potatoes
1/2 tsp salt in potatoes
1/4 cup nutritional yeast
For filling
1 tbs olive oil
1/2 cup chopped shallot
1/2 cup chopped celery
1/2 cup chopped carrots
1 1/2 cups chopped seitan (from our cheesesteak video)
1 tbsp olive oil
1 tbsp flour
1 tsp apple cider vinegar
1 cup veggie broth
1 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
1/2 tsp thyme
Boil potatoes for 20 mins then strain.
Add ingredients listed and mash.
Set aside.
Heat olive oil in pan and add shallots, celery and carrots.
Add seitan. Push it all to one side add olive oil and flour
and make a roux. Mix everything together. Add vinegar and
veggie broth. Add rest of seasonings.
Put filling is bake dish or stainless steel pan as we did in
video. Leave about 1 1/2" lip and add potato mixture to top
and spread evenly. Cut slit in top for steam.
Put in oven for 45 mins at 350 degrees.[...less]

Dough for 2 shells
2 cups Fresh baby spinach
2 cups Fresh broccoli chopped
2 cloves minced garlic
Vegan cream cheese (Tofutti or Food Galaxy) spread spoonfuls over pizza shell
Vegan pizza sauce
Sprinkle garlic powder/parsley blend and oregano (to your liking) over pizza
Daiya cheese Mozzarella 1/2 bag & Cheddar 1/4 bag or (your favorite vegan cheese)
Add top shell make sure there is no oil or sauce on crust layer so it can stick together. Shave sides down with end of pizza cutter or wooden spoon handle.
Brush top with mixture of a little pizza sauce a a tbs or 2 of olive oil or water.
Cut slits on top layer.

The Vegan Zomblette Ingredients:
1/2 brick firm tofu (fresh, not frozen and thawed)
1 tbsp nutritional yeast
1 tsp corn starch
2 tbsp chick pea flour
1/2 tsp curry powder
1/8 tsp salt
1/8 tsp pepper
1/8 tsp paprika
1/8 tsp sage
1 tsp onion powder
1 tsp dijon mustard
1 tsp vegan worcestershire sauce (we used Edward & Sons organic)
3-5 tbsp veggie broth till you get medium thick pancake batter consistency (how drained your tofu is will affect this)
optional 2-3 shakes of hot sauce
1 handful of fresh chopped spinach
Add everything except spinach to blender.
Blend till smooth batter.
Add chopped spinach and stir in with spoon.
Use non stick pan, lightly oil or spray.
Turn heat to low temperature or in between Med and Low
Pour batter on heated skillet and smooth out so middle is even with edge.
Cover and let cook for 5-7 mins.
Use thin spatula to flip.
Cover again and cook for 3-5 mins.
Add chopped veggies of your choice and Daiya Cheddar Cheese (optional) to omelet.
Fold omelet and cover again to melt cheese.

2 large onions (diced)
2 cups chopped carrots
2 cups chopped celery
bundle of fresh parsley
6 or 7 cloves garlic
2 tbsp thyme
5 or 6 bay leaves
heat 3 tbsp olive oil in deep pan over medium heat
add chopped onions (sizzle) turn heat up a tad
smash/crush garlic cloves and add to pot.
add all other ingredients
cook for 5-10 mins
add 24 cups water
bring to boil
lower heat and cover
simmer for 1hr to 1 1/2 hrs
cool in ice bath
strain with cheese cloth and colander[...less]

Pumpkin Soup
Ingredients
2 pie pumpkins (or 1 ½ can pureed pumpkin)
I large onion, roughly chopped
½ container of vegan cream cheese
2 TB vegan sour cream
3 cloves of chopped garlic
3 bay leaves
1 tsp parsley
1 TB fresh marjoram
Combine ½ tsp salt, ½ tsp curry, ¼ tsp sage ¼ tsp ginger
2 celery stalks
Juice of ½ of a lime
2 TB brown sugar
3-4 cups veggie stock
½ TB olive oil
Preheat oven to 450 degrees
Remove top stem of pie pumpkins. Take the tip of the knife blade and cut directly underneath the stem and work down one side of the pumpkin . Repeat step on the other side. Finally cut directly down the stem from the top to separate the pumpkin.
Scoop out the seeds so that pumpkin is hollowed out and set aside. Take about ½ TB olive oil and pour into each pumpkin,
dividing evenly. Use brush or hand to coat inside of pumpkin with oil. Add small dusting of salt to each pumpkin. Place
pumpkins on baking sheet , hollow side up and bake about 30-40 minutes. Check after 30 minutes by sticking with a fork. If the
fork goes into the pumpkin easily, the pumpkin is ready.
Once cooked, remove from oven and set aside. Once pumpkins are cooled, dump any access water from each pumpkin into
a mixing bowl. Chop pumpkin into medium size chunks and remove skin and add to mixing bowl with water from pumpkins.
Mash together until somewhat smooth. Chop celery into medium size pieces.
In a pan, add 2 ½ - 3 TB olive oil over medium heat until warm. Add chopped onion and sauté until semi-soft. Add chopped
celery, garlic, spice mix, parsley, and lime juice and let cook for 5 minutes. Add pumpkin mixture to pan and stir together with other ingredients cooking for a few minutes. Add vegetable stock to the pan (use about 3 cups for thicker soup). Turn heat to high and add the bay leaves. Add brown sugar, bring to a boil, stirring occasionally. Bring down to a simmer, cooking for about 20 minutes. Remove from heat and remove bay leaves from the pan.
Fill a blender about ¾ of the way full with the contents in the pan, leaving the center piece off the lid of the blender. Cover the top of the blender with a towel and pulse about 3 times. After pulsing, turn blender on high and blend until soupy. Pour into large serving bowl and set aside. Add the rest of the soup to the blender. Add marjoram, saving a small amount for garnish.
Add vegan cream cheese and vegan sour cream and blend together until smooth. Add to the large serving bowl and mix
together. Spoon out into bowls and add salt and pepper to taste. Add marjoram garnish if desired.

Lasagna noodles
1 block firm tofu
1 tomato (spears)
Fresh basil (chopped)
Fresh spinach
Lemon juice (1/2 lemon squeezed)
1 cup diced onion
Herb blend 1 tsp oregano, 1/2 tsp paprika, 1 tsp garlic powder)
salt & pepper to taste
add noodles to boiling water. saute diced onion med heat.
crumble up tofu drain and add to pan.
add basil and herb blend. add lemon juice. place tofu filling on
noodles. add spinach and tomato spears. add sauce. roll up and place
sideways in pan.

1 lb Match Meats faux ground beef (or your preferred faux meat)
1/2 container vegan cream cheese.
1 tomato (spears)
Fresh basil (chopped)
Fresh spinach
1 cup diced onion

salt & pepper to taste
saute onion med heat. add match meat. add vegan cream cheese.
add herb blend. add Daiya stir in till it melts. let cool. spread on noodles.

Ingredients for black bean burger:
1 large potato (diced)
1 tsp rosemary
1 tsp thyme
1/2 tsp sage
1/2 tsp salt & pepper (can add more to your liking)
1 cup chopped onion
2 cloves grated garlic
1 chipotle pepper (or 2 to make more spicy)
-add half poblano pepper (diced)
-saute all in pan of heated olive oil (medium heat) until brown
-don't let potatoes get crispy
-dump into mixing bowl
-add 1 1/2 cups black beans
1/4 cup Daiya Pepper Jack (optional)
2 tbsp brown sugar
1/2 cup vegan breadcumbs
-form into burger patties
-dredge in flour
-cook burger[...less]

Makes 6 half stuffed peppers.
Ingredients:
Rice mixture
1/2 cup rice (use 1 1/4 cup water to cook rice)
Add the follow to cooked rice:
1 tsp garlic powder
1 tsp chili powder
1 tsp paprika
1/2 tsp cumin
1 handful Daiya Cheese (Cheddar or Pepper Jack)
stir together and set aside
Bean filling:
Dice a medium onion and saute with olive oil over medium heat
Add 1 cup black beans
2 cloves crushed garlic
1 diced chipolte pepper
3 diced small sweet peppers
1 tsp chili powder
1 tsp paprika
1/2 cup frozen corn
1/4 tsp salt
Stir it all together
Slice 3 poblano peppers in half lengthwise (you can use green too) scrape out seeds.
Stuff pepper halves with the rice, then the bean topping.
Add vegan bread crumbs (we use Edward & Sons)
Add pinch of salt and pepper and put in oven heated to
350*F for 20-25 mins
Take out of oven and add vegan queso on top (we used the food-for-lovers.com brand)[...less]

Ingredients:
*Crust
- 2/1/2 cups flour
- 1 tsp salt
- 1/4 tsp pepper
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1 tsp thyme
WHISK TOGETHER THE DRY THEN ADD:
- 1/4 cup Earth Balance Butter
- 1 cup Earth Balance Shortening
START ADDING COLD WATER 1 TBSP AT A TIME (ABOUT 1/2 CUP) THEN WRAP UP IN A BALL IN SARAN WRAP. PUT IN FRIDGE WHILE YOU MAKE THE FILLING.
*Filling
- 1 potato
- 1 medium onion
- 2 cloves shredded garlic
- 2 delicious carrots
- 1 pakage smoked Tofu Lin or seitan
- 8 shiitake mushrooms (optional)
- 2 cups veggie stock
-DICE UP YOUR VEGGIES INTO SMALL CUBES.
-PUT 2-3 TBSP OLIVE OIL INTO BIG POT UNDER MED HEAT.
-ADD ONIONS (SAUTE)
-ADD POTATOES CARROTS MUSHROOMS AND TOFU
-ADD MINCED GARLIC
NEXT ADD:
-1 tsp salt
-1 tsp thyme
- 1/2 tsp chili powder
- 1 tsp paprika
- 2 tbsp soy sauce
- 1 tsp dried parsley
- 2 tbsp flour to thicken it up
*Stir together and let cook for 2 mins then add 2 cups of veggie stock.
*Bring to a boil then cover and simmer for 20 mins. Once potatoes are done it's ready.
-FLATTEN CRUST BETWEEN TWO PIECES OF PARCHMENT PAPER TILL IT'S ABOUT 1/4 INCH THICK.
-PLACE COOKED FILLING INTO OVEN SAFE CERAMIC COOKING DISH.
-THEN PLOP CRUST OVER DISH AND TAKE OFF EXCESS CRUST (SEE VIDEO)
- SLICE 4 OR 5 SLITS IN CRUST.
-PLACE IN OVER FOR 20 MINS FOR 350 DEGREES[...less]

Ingredients:
1 lb elbow pasta
1/4 cup flour
1/4 cup canola oil
2 cups soymilk
Daiya cheese 1 1/3 cup (feel free to mix a little of each flavor)
1 tbsp basil garlic spice
1 tsp onion powder
vegan bread crumbs
paprika
salt & pepper
boil pasta
heat canola oil over med heat
stir in flour
add soymilk and bring to boil
add salt pepper, basil garlic spice, and onion powder
add cheese and stir together
strain pasta and put in deep pot
pour melted cheese sauce over pasta
place in glassware dish
add breadcrumbs
sprinkle paprika on top
place in over 20 mins for 350*[...less]

-Vegan Daiya Cheeseteak:
-Mix dry ingredients and wet ingredients, then mix both together for seitan:
Dry
1 1/2 cup vital wheat gluten
1/4 cup nutritional yeast
1/2 cup garbonzo bean powder (or chick pea flour)
2 tbsp brown sugar
1/2 tbsp mesquite ( http://bit.ly/Hozrdq )
1/2 tbsp garlic powder
1/2 tsp turmeric
-Wet ingredients:
1 tbsp worcestershire sauce
1 cup vegetable stock
1 tbsp soy sauce
1 tsp liquid smoke
2 cloves of shredded garlic
pinch of pepper
-add all ingredients together and form a dough. Cut in half and make two logs and place in casserole dish.
-Stock to cook seitan in:
1 1/2 cup vegetable stock
1 diced onion
4 smashed cloves garlic
2 bay leaves
1/4 cup brown sugar
1/2 tsp chili powder
1 tbsp dried parsley
1/2 tsp thyme
1 tbsp soy sauce
1 tbsp molasses
2 cups water
-Heat on stove 5- 10 mins
-Pour in casserole dish to cover seitan. Cover dish and place in oven 350 for 1 hour. Then flip seitan and continue to cook for 1/2 hour uncovered. If still too soft, then cook for another 20 mins.
Daiya cheese sauce
1 cup Daiya cheese (cheddar)
1/2 cup soy milk
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp paprika
pinch of pepper
1 tbsp dijon mustard
Stir it all together over med heat and set aside.
Slice up your seitan, and saute it together with a diced onion and diced poblano pepper. Toast a roll of your choice and add Vegenaise and your seitan saute to it. Add Daiya cheese sauce and you're good to go...Enjoy!

Vegan Mozzarella Sticks *Makes about 10-12 sticks. INGREDIENTS: - Daiya shredded mozarella - Breadcrumbs - Garlic powder with oregano, salt, pepper (4-5 tbsp garlic powder 1 tbsp oregano 1 tsp salt and pepper all mixed up together). - Soy milk - Flour - Canola oil
1) Melt 1 pkg Daiya cheese in bowl in stovetop. Glass bowl on top of saucepan. Add 1-2 tsp of seasoning. add 1-2 tbps soymilk to cheese while melting in step 1
2) Pour melted Daiya into bread pan. Smooth out the top. Put in fridge for 1 hr. 3) Scrape cheese out in one piece onto a chopping block.
4) Cut into 2" long fingers
5) Dump seasoning into breadcrumps. Stir.
6) Pick up cheese stick. Dunk in soy milk. Dredge in flour. Back into soymilk. Then into breadcrumbs.
7) Put into deep fryer. If you don't have one, add a couple inches of canola oil to a pot. Test a piece to be sure it fries. Then put in the sticks, about 3 at a time.
8) Once they are golden brown, take them out of the oil and put them on a paper towel to absorb the grease[...less]

1 big can kidney beans
1 cup cashews
1 diced onion
2-3 tbsp olive oil
1 cup brown sugar
1/4 cup molasses
3 tbsp chili powder
2 tbsp dried garlic
