This is a complete walkthrough on how to make Chipotle Vegan Fajitas and Chipotle 3 Bean Vegan Chili.
Both of these meals are amazing even without the chipotle peppers so if finding them is holding you back, just make these without.
For the vegan fajitas, its best if you made the rest of the fajita spread in advance or else that will be a lot of cooking that night. Black beans save and reheat well, so does the rice. The guac you should make fresh.
Vegan Chili Is great, but whenever you make chili you have a ton of it. This gives some ideas of what to do with the leftover chili such as vegan chili cheese dogs (just get a vegan hot dog, boil it, and slap it on), vegan chili cheese waffle fries, vegan chilli cheese burger, and more.
The 3 Beans used in the chili are Black Beans, Chick peas (garbanzo beans), and Kidney beans (or you can use small red beans). I washed and drained all of these in a pasta strainer.
