Breakfast: Pancakes!

- 1.5 cup oats

- 1 cup almond milk

- 1 ripe banana

- 1 tbsp coconut sugar

- 1/2 tsp cinnamon

Method:

1) Add all ingredients into a blender/processor and process until it forms a smooth batter

2) Heat a non-stick fry pan on low/medium heat

3) Pour batter onto pan to form pancakes

4) Cook until bubbles form or until the outside of the pancakes look matte instead of looking shiny

5) Flip and cook for an additional 2 minutes on the other side

6) Serve with fresh fruit + maple syrup or sauce of your choice (I just mixed carob powder with water, as simple as that!)

Lunch: @ Green Palace Vegan Thai Restaurant

Snack/Pre-Dinner: Nicecream bowl

- 1 frozen banana

- 1/2 cup frozen mangoes

- 1/2 cup frozen blueberries

- 1/2 cup frozen raspberries

- 1 tsp vanilla powder

- 1/3 cup coconut water

Method:

1) Add into a processor or blender and process until smooth and creamy

2) Top with desired toppings (I used fresh fruit, nuts, seeds & nutty muesli from Table of Plenty: http://www.tableofplenty.com.au/product/muesli/nicely-nutty-muesli/ )

Dinner: Rice + Bean Burgers

- 1/2 cup brown rice (cooked)

- 1 can butterbeans or beans of your choice

- 2 tbsp flaxseeds

- 1/4 cup quick oats

- 1 onion, diced

- Handful coriander, finely chopped

- 1 tbsp Dukkah - http://www.tableofplenty.com.au/product/dukkah/pistachio-dukkah/

- 1 tsp rosemary

- Any additional herbs/spices you desire

- Splash of water OR oil if you use oil

Method

1) Add all ingredients into a bowl and mash until beans are mashed up (should have mashed them up separately or added everything into a processor and processed it but OH WELL)

2) Bake or fry on a pan until golden and cooked through

3) Serve with rice, have in between burger buns... whatever you desire!
