BREAKFAST: BLUEBERRY OATMEAL

- 1 cup oats (I use quick oats)

- 2 cups almond milk

- 1/2 tsp cinnamon

- 1/4 tsp nutmeg

- 1 cup frozen blueberries

- 1 tbsp maple syrup

Method:

1) Add oats, milk, cinnamon and nutmeg into saucepan

2) Cook on medium heat, stirring occasionally to prevent burning/sticking

3) Once cooked to the consistency you like, turn off heat and add in frozen blueberries and maple syrup. Stir through.

4) Top with toppings of your choice (I used fresh strawberries, blueberries, pepitas, caramelised buckinis, puffed quinoa & almonds)

5) Enjoy!

SNACK/LUNCH PART 1 (hence less ingredients compared to my smoothies that I have as a meal):

Ingredients:

- 2 fresh bananas

- 1 packet of frozen pink pitaya

- 1 cup frozen strawberries

- 4 dates

- 1 cup 100% orange juice

Method:

1) Add into a blender, blend until smooth and drink! :)

DINNER: RICE NOODLE STIRFRY

Ingredients:

- Rice noodles (as much/as less as you desire depending on how much you eat and who you're cooking for)

- 1 onion, thinly sliced

- 1 large carrot, shredded

- 1 cup frozen green beans (rinsed/defrosted)

- 1 cup bean sprouts, washed

- 1 cup mushrooms (of choice)

- 1 cup tofu (of choice)

- Sauce: 1 tbsp dark soy sauce, 1 tbsp light soy sauce, 1 tbsp vegan oyster sauce (mushroom based), dash of pepper, 1 tsp maple syrup

- If you need to thicken sauce: 1/2tbsp cornstarch mixed in 1/2 tbsp COLD water

Method:

1) Cook noodles until just before cooked (i.e. still a bite to them, they will finish cooking in the pan with everything else)

2) Add a splash of water to a pan and add in onion, cook for 1-2 minutes

3) Add in carrots and cook for another minute

4) Add in mushrooms and also cook for another minute

5) Add in tofu, green beans, rice noodles & sauce. You may need to add in water if its too dry

6) Stir through so everything is well-combined, cook for 3-4 minutes

7) At the very end add in the bean sprouts and stir through.

8) Top with sesame seeds + chilli if desired and serve :)
