BREAKFAST: SMOOTHIE BOWL
- 1 cup fresh pineapple
- 1 cup fresh strawberries
- 1 frozen pitaya pack
- 1 cup frozen blueberries
- 2 ripe bananas
- Splash of coconut water
1) Add all ingredients into a blender and blend until smooth!
2) Pour into a bowl, top with your desired toppings and serve.
LUNCH: ONE POT PASTA
- Pasta (I have no idea how much I used, I poured it out of a container that I stored it in but I'd say around 500g dry pasta)
- 500g jar of pasta sauce
- 400g can of diced tomatoes
- 1 onion, diced
- 1 garlic, minced
- 1 carrot, diced
- 1 zucchini, diced
- 1 capsicum, diced
- 1 can beans/lentils (up to you)
- 1 tbsp mixed herbs
- 1 tbsp coconut sugar
- Enough water to just reach the level of all the ingredients (refer to video)
1) Add all ingredients into a large saucepan. Stir well.
2) Turn heat onto high, pop the lid on and wait until it comes to the boil.
3) Once it comes to the boil, turn heat down to medium and allow it to cook until pasta is cooked. Stir occasionally to prevent sticking at the bottom.
4) If you need to add more water (i.e pasta isn't cooked but all the liquid has been soaked up) just add more as you go
5) Top with cracked black pepper & parsley or basil and serve
DINNER: RICE & STIRFRY
- Rice of your choice
- Shitake mushrooms, sliced
- Low sodium soy sauce
- Vegan oyster sauce
- Slurry (equal amounts of cornstarch + cold water mixed together)
1) Bring a large saucepan of water to the boil
2) Add in bokchoy and mushrooms and allow it to sit in the water for 45s-1m (don't overcook!)
3) Drain, discard water
4) Add in a splash of vegan oyster sauce, low sodium soy sauce & water (if you want it to be saucey, if not then leave it out) and add in bokchoy and mushrooms
5) Cook for 30 seconds then pour in your slurry if you added in extra water (to make a sauce)
6) Stir well and cook until sauce has thickened to a nice consistency
7) Serve with rice and enjoy!
