Hi everyone!! Welcome to another video. I'm in the middle of editing the gym footage from my workout video but I've yet to film a little intro/outro for it! Stay tuned as it'll be my next upload. Breakfast: Vanilla & Berry Oats

Serves: 2-3

Time: 15 minutes

Ingredients:

- 2 cups oats

- 2 cups water

- 2 cups coconut milk

- 1 heaping tsp cinnamon

- 1 heaping tbsp Tropeaka vanilla protein

- 1 heaping tsp chia seeds

- 1/3 cup each of frozen berries of your choice

- Toppings of choice

Method:

1. Add all ingredients except the frozen berries + toppings into the saucepan. Cook on medium heat and stir until thickened.

2. Stir through frozen berries and transfer into bowls.

3. Top with ingredients of choice.

Lunch: Brown Rice & Dal

Serves: 4

Time: 40-50 minutes

Ingredients:

- 2 cups red lentils, rinsed

- 5 cups water

- 2 veggie stock cubes (I accidentally cut this out of the video)

- 1 tsp cumin

- 1 tsp turmeric

- 1 tsp curry powder

- 1 tsp ground coriander

- 1 onion, diced

- 2 garlic cloves, minced

- Cooked brown rice

- Fresh veggies to serve if desired

Method:

1. Fry onion and garlic into a pan, cook for 1 minute until fragrant.

2. Add in spices and stir around for 20 seconds.

3. Add in lentils, water and stock cubes and stir through.

4. Bring to the boil then lower heat and simmer for 30-40 minutes or until softened and liquid has cooked down.

5. Serve with brown rice & fresh veggies.

Dinner: Roast Potatoes with Steamed Veg, BBQ Tofu, Salad & Gravy

Serves: 2

Time: 40-50 minutes

Ingredients:

- 4 potatoes, washed, peeled & sliced into bite sized pieces

- 1/2 tbsp dried mixed herbs

- 2 cups frozen mixed veggies

- Vegan gravy powder

- 1/2 block tofu, diced

- Sauce: Bbq sauce, dark soy sauce, sesame seeds, dash of black pepper, tiny bit of coconut sugar, garlic powder, onion powder, water

- Salad if desired

Method:

1. Begin by tossing potatoes with herbs and placing in an oven or airfryer and cooking for 40 minutes at 180*C.

2. In the meantime, fry diced tofu until golden then pour in sauce and cook until sauce nicely coats tofu.

3. Make home-made gravy OR use vegan gravy powder and make according to packet instructions.

4. Steam veggies.

5. Assemble by placing all onto a plate and topping it off by pouring gravy on top. Enjoy!!
