BREAKFAST: SMOOTHIE BOWL

Ingredients:

- 2 ripe bananas

- 1 kiwifruit

- 1/4 cup oats

- 1 tsp chia seeds

- 1/2 tbsp acai powder

- 1/2 cup frozen mango

- 1/2 cup mixed berries

- Splash of coconut water

Method:

1) Add all ingredients into a blender and blend until smooth

2) Pour into a bowl and add toppings of choice on top! :) Enjoy

LUNCH: AVO + TOMATO ON TOAST

Ingredients:

- 4 slices bread

- 1 avocado

- 2 tomatoes

- Handful pepitas

- 1 tbsp hemp seeds

- Sprinkle of dukkah

- Salt & pepper

- Lemon if desired

Method:

1) Toast bread

2) Thinly slice tomatoes and add 2-3 slices onto toast

3) Quarter avocado and slice thinly, spread evenly onto toast

4) Add on everything else (pepitas, hemp seeds, dukkah, salt pepper...)

5) Enjoy!!

SNACK: DAILY GREEN SMOOTHIE

Ingredients:

- Huge handful of baby spinach

- Splash of 100% tropical juice (Nudie)

- 2 ripe bananas

- 1/2 avocado

- 1/2 cup frozen mangoes

- 1 tbsp coconut flakes

- 1 tsp chia seeds

Method:

1) Add all ingredients into a blender and blend until smooth (I recommend adding in the baby spinach with the liquid at the bottom first. If your blender isn't that powerful, blend the spinach + liquid first until you end up with a green liquid before adding in your remaining ingredients)

DINNER: RICE PAPER ROLLS

(Really customisable, just add whatever you like into it!)

Ingredients:

- Rice paper sheets (+ a large plate/bowl of warm water to dip them into)

- Lettuce

- Cucumber

- Carrot

- Sprouts

- Fresh mint and thai basil

- Tofu

- Vermicelli

Dipping sauce ingredients: 1 tbsp peanut butter, 1 tbsp soy sauce, 1 tbsp coconut sugar, juice of 1/2 lemon, water to thin it out (Optional: fresh garlic, ginger, chilli)

Method:

1) Dip rice paper sheet into bowl of warm water until all parts have been soaked through

2) Place onto plate and start adding all your ingredients in

3) Hold all ingredients tightly in place as you add one after the other

4) Begin by wrapping the rice paper from the edge thats closest to you on top of the ingredients, followed by the 2 sides before rolling it all the way down

5) Repeat as many times as you'd like depending on how many you feel like eating

6) Add all dipping sauce ingredients into a bowl and mix until smooth!

7) Enjoyyyy :)
