Breakfast: Acai smoothie


- 1 large ripe banana

- 1 pineapple chunk

- 1 cup watermelon chunks

- 1/4 cup frozen blueberries

- 3-4 frozen strawberries

- 1/4 cup frozen raspberries

- 1 tbsp Tropeaka acai powder


1. Add all ingredients into a blender and blend until smooth



- 1 onion, sliced into bite size pieces

- 1 carrot, thinly sliced

- 1 small block firm tofu, thinly sliced

- 1 small head broccoli, cut into bite sized pieces

- 1 tbsp peanut satay sauce (mine is store bought and yes it is vegan, feel free to make your own at home)

- 2 tsp Sriracha

- 2-3 tbsp soy sauce

- Dash of black pepper

- 1 cup coconut milk

- Handful green onions, thinly sliced


1. Add onions into a pan and fry on high heat for 1 minute

2. Add in carrots, tofu and broccoli and cook for another minute

3. Add in peanut satay sauce (homemade or vegan storebought), soy sauce, pepper and sriracha. Toss through.

4. Add in coconut milk and cook until sauce has slightly thickened and veggies are cooked through

5. Serve with rice and add sesame seeds/green onions if desired.

Dinner: Hokkien Noodles

- 1 packet of hokkien noodles (check the ingredients, mine are wheat based with no eggs)

- 1 carrot, thinly sliced

- 1 onion, thinly sliced

- 1 bunch chinese broccoli, roughly chopped

- 1 cup broccoli, cut up into florets

- 1 small block firm tofu, thinly sliced

- 1 cup mushrooms, thinly sliced

- Soy sauce to taste

- Black pepper

- Any other sauces of choice

- Handful green onions


1. Blanch veggies + mushrooms (can skip) for 1 minute and drain. This just speeds up the cooking process.

2. In the same water add in noodles and separate each strands, drain and set aside

3. Add onion to pan and fry for 1 minute

4. Add in blanched veggies (fry for 2-3 minutes if not blanched), noodles and tofu. Toss together.

5. Season with soy sauce, pepper and any other sauces of choice

6. Cook until sauce has been absorbed by noodles/veg and everything has been cooked and warmed through.

7. Finish off by adding in a handful of green onions.

8. Top with chilli, green onions & sesame and serve
