BREAKFAST: RICE PORRIDGE (Made this for 2 so halve the ingredients if making for 1)


- 2 cups rice flakes

- 1 cup coconut milk, 1 cup almond milk, 2 cups water

- 1 ripe banana

- 1 tsp cinnamon, 1/2 tsp nutmeg, 2-3 cardamon pods (crushed the insides and added them in)

- 2 tbsp maple syrup


1) Add all ingredients apart from maple syrup into a saucepan, cook on medium heat stirring frequently until thickened

2) Add in maple syrup to taste

3) Top with whatever you desire (fruit, nuts etc)

4) Serve!



- 2/3 packet of firm tofu (my packet had 6 small blocks so I used 4 blocks)

- 1 tsp Indian Masala spice (or use any sort of curry powder, or replace with a bit of cumin... up to you)

- 1/2 tsp tumeric

- 2 tbsp tamari or soy sauce

- Salt and pepper if desired

- SALAD: black beans, corn, coriander, cucumber, tomato, lemon juice


1) Take out tofu blocks and try removing the excess water (I didn't really press mine, just went over with a few paper towels so it wasn't dripping wet)

2) Add into a bowl and mash it up so it's chunky/fluffy

3) Put a pan onto medium-high heat and add tofu in, if it releases a lot of water then cook until most of the water has evaporated

4) Add in spices, cook for another minute

5) Finally season with salt and pepper (if you'd like) and soy sauce

6) Serve with toast + salad :)



- 1 packet of hokkien noodles (no mine do not contain egg, some brands may but a lot of others don't so just double check the ingredients on the back)

- 1 onion, thinly sliced

- 1 carrot, thinly shredded

- 1 bunch spinach

- 1 cup tofu

- 1 cup bean sprouts

- 3 stalks green onion, thinly sliced

- 2 tbsp vegan oyster sauce

- 2 tbsp soy sauce

- Dash of pepper


1) Begin by first blanching the spinach, then setting aside

2) Bring some water to the boil in a large saucepan and put the hokkien noodles in and allow the strands to separate and cook for 1 minute. You'll see that a lot of the oil floats up to the top too - discard this water.

3) Add onion to a pan and fry for 1 minute

4) Add in carrot and fry for another minute

5) Add in tofu, spinach and noodles and stir through till well incorporated

6) Season/flavour with sauces + pepper to taste

7) Add in bean sprouts + green onions at the very end then turn off heat

8) Top with sesame seeds, chilli and more green onions and serve!
