Summer is ending but we still have time to savor those bright citrus colors and flavors. Today we are going to make orange marmalade oatmeal squares. I like to cheat and have the sweet treats for breakfast.
Orange Marmalade Oatmeal Squares Recipe
1/2 cup firmly packed light brown sugar
1 cup unbleached all purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup quick cooking oats
1/2 cup coconut oil
3/4 cup orange marmalade
Preheat oven to 350 degrees Fahrenheit.
Line an 8 by 8 inch baking pan with parchment paper.
In a large mixing bowl, whisk together brown sugar, flour, baking soda, salt, and oats.
Mix the coconut oil into the dry mixture using your fingers until clumps and crumbs form throughout.
Press about 2/3 of the oatmeal mix evenly across the bottom of the lined pan.
Spread the orange marmalade over the oatmeal base, but not close to the edge. It will burn and stink.
Scatter the remaining oatmeal mix over the top of the marmalade and lightly press it in, just to marry the layers.
Bake for 35 to 40 minutes, until lightly brown. Watch it closely when giving it extra time to brown, because it can go from pale to charred very quickly.
Remove from pan when cooled and cut into 2 inch squares.
