Apple Pie Salad Recipe
1 oz baby spinach
1 Honeycrisp apple
Juice of 1/2 lemon
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
1/4 cup raisins
2 tablespoon almond butter
1 tablespoon chopped cashews
Create a bed of spinach on top of a salad plate.
Core the apple, the cut the remaining flesh into slices.
Fan the apple slices evenly over the bed of spinach.
Squeeze lemon juice evenly over the apple, the follow with vanilla extract.
Sprinkle on the cinnamon and raisins next.
Drizzle on the almond butter in a lattice pattern.
Scatter the cashews about the top of the salad like you just don’t care!
Salad #3 is done. Eat up.
