Minion, or the Minions (because there are a lot of them - some have one eye, some have two) is the star of the children's animation Despicable Me and Despicable Me 2. Today, Day 3 of My Daily Tart, we will be turning a Minion into a tart. So exciting. It is a good way to get kids to eat more whole fruits! Adults too.

Minion Tart Recipe

Make one 8 inch tart

Ingredients:

(crust)

4 pitted dates

1/2 cup old fashion oats

1/2 cup Earth Balance Butter

1 cup white whole wheat flour

(fillings)

1 cup almonds

2 mangos, peeled, pitted, chopped

1/4 teaspoon vanilla extract

(topping)

1/2 banana, peeled, sliced

1 cup raisins

Directions:

Preheat the oven to 350 degrees F.

Add pitted dates and old fashion oats to the food processor.

Process until the dates form tiny crystals and the oats have a flour like consistency.

Add Earth Balance butter and white whole wheat flour to the food processor.

Lightly pulse until everything is buttery and crumbly.

Move flour mix to an 8 or 9 inch tart pan and press it out evenly along the bottom and sides.

Bake the crust for 20 minutes.

Grind almonds to a fine powder in the food processor.

Peel and remove the seed from two mangos.

Add the meat of the mangos to the almonds in the processor and puree.

Once the crust is baked and cooled, pour the mango puree onto the crust.

Spread the puree out evenly and then freeze for one to two hours.

Peel and thinly slice half a banana.

Use several banana slices to form a minion eyeball in the upper center of the tart.

Arrange a ring of raisins around the eye ball and extend two raisin straps from the ring to the edge of the tart to create the Minions goggles.

Make a little smirk of a smile beneath the eyeball for the Minions mouth.

Eat up!
