My avocado salad is inspired by my Auntie Melboline's Pound Cake. I chose her''s as inspiration because it featured her not-so-secret ingredient of sour cream. With my avocado as the main ingredient for this savory salad, I thought a vegan sour cream dressing sounded delicious. I picked avocados because they are so fatty, full and buttery, just like the pound of butter in pound cake.
Bed of salad greens of your choice
1 avocado, peeled, pitted, thinly sliced
Salt and Pepper (optional)

1 cup raw cashews, soaked overnight
1/2 cup water
2 teaspoons fresh lemon juice
1 teaspoon apple cider vinegar
