Tangy Grilled Brussel Sprout Skewers

1 lb. Brussels sprouts, halved

3 tbsp. extra-virgin olive oil

1/4 c. balsamic vinegar

1 tbsp. agave

1 tbsp. dijon mustard

2 tsp. crushed red pepper flakes

Salt, to taste

In a large bowl, combine Brussels sprouts, olive oil, vinegar, agave, mustard and red pepper flakes and season with salt. Allow to marinate for 30 minutes.

Heat grill to high.

Place sprouts on skewers. Grill, turning frequently, until sprouts are tender and cooked through, about 10 minutes.

Pesto Portobello Mushrooms

1 1/2 cups fresh basil

1/3 cup olive oil

1 cup pine nuts (other nuts, such as almonds or walnuts may be substituted)

5 cloves garlic

1/3 cup nutritional yeast

3/4 teaspoon salt

1/2 teaspoon black pepper

Place all pesto ingredients into blender and blend until smooth. Add more salt and pepper if needed for taste as well as olive oil for a creamier texture.

Clean mushrooms and remove stems, reserve for other use. Place caps on a plate with the gills up.

In a small bowl, pour pesto evenly over the mushroom caps and let stand for 1 hour.

Oil the grill.

Grill mushrooms over hot grill for 10 minutes. Flip half way to cook evenly. Serve immediately.

Chocolate Strawberry Grilled Quesadillas

4 (6-inch) flour tortillas

Chocolate Chips

Sliced strawberries

Preheat the grill to medium heat.

Lightly oil grill grates and place flour tortillas on grill. Heat for 2-3 minutes or to desired degree of doneness. Sprinkle chocolate chips on one half during the last 30 seconds to start the melting process.

Place sliced strawberries on one half and fold the other half over quickly as the heat from the tortillas will help melt the chips nicely.
