Using the Proper Knife
Many people are afraid of using large 8- or 9-inch knives lest they cut themselves, but these knives actually give you more control than small paring knives. Because in a vegan kitchen, you're not deveining, cleaving, or deboning anyone, all you need is one good knife (okay - and a serrated knife for bread). These and other tips abound on this helpful video that also shows the proper way to chop an onion while keeping it vegetarian (by not adding bits of your finger to the mix!). Enjoy!
