In this hilarious, informative, and entertaining vegan recipe video, celebrity chef and Cooking Channel TV host Jason Wrobel shows you how to use your leftovers in a better way. Since the dawn of humanity, the question of what to do with leftovers has plagued us all. Do you just eat it as is? Do you reheat it? Do you create something new with those same ingredients? J-Wro has the least for leftover brown rice. He’ll whip up an awesome arugula pesto to transform that rice into something exciting once more.

Start with the pesto. You’ll need a blender or food processor, but a twister jar works best. Add arugula, extra virgin olive oil, filtered water, sea salt, and ground pepper. Pulse that slowly to keep your sauce from getting too thin. You want more toppings too, so soak some black radish in lemon juice and sea salt to mute the heat. You can use regular radish too, if you can’t find the black variety.

Grab a medium to large mixing bowl and a good wooden spoon or spatula. Toss in your leftover brown rice. Add to it minced dill, shredded organic lemon peel, lemon juice, and your pesto. Salt and pepper that dish to taste. Top it off with a little Sunwarrior Vitamin Mineral Rush, those black radishes, a little more lemon peel, hot sauce, some crumbled vegan feta cheese, and a little more dill. Dig in! This is nothing like the boring brown rice you started with. It’s delicious, savory, spicy, and more satisfying than you know. Look forward to more leftover food hacking from Jason Wrobel.
