You can see from the long ingredient list why these are called “loaded” muffins, but gosh, they’re delicious. It’s crunch time over at Ethical Ocean and their Eat What’s Good vegan recipe contest. Dinner 04/06 Deep-Fried Tempeh Sushi with Carrot and Avocado There's a reason why we often make this sushi roll. ;) The tempeh is cut into four long strips, braised in a pan that has enough water to come up halfway on the side of the tempeh with the addition of a splash of sake (feel free to use mirin)

I am so hungry right now I could crawl through this screen & gobble this up! I am on day 2 of a 3 day Kaeng Raeng cleanse, & I am dying. I can however, eat raw fruits & veggies on this cleanse, & I just might have to make this for dinner to supplement my “shake.” In fact, I think I absolutely will! Gorgeous!

As a vegan charter pilot I have to put a bit more THOUGHT into what and where I'm eating but not really much more effort. Websites like happycow.net and Yelp are helpful in finding vegan restaurants (or veg friendly) in cities where I travel. It's not like there's some special secret to making an amazing glass of juice. All you're doing is helping the mind-blowingly delicious flavours of fresh fruits and veggies shine through, and letting your taste buds do the rest. Simple. Yet every time I make juice (about once every one or two days) I cannot believe how incredible it tastes.
